Dirty Rice (Homestyle Southern Recipe)

Ingredients

  • Giblets of 3 chickens, chopped
  • 1 medium onion, diced
  • 2 tbsp parsley
  • 3 tbsp fat (butter or drippings)
  • 1 clove garlic, minced (optional)
  • 3 tbsp green onion, chopped
  • Salt, pepper, poultry seasoning to taste
  • 1 cup chicken broth
  • 2 stalks celery, chopped fine (include leaves)
  • 1 ½ cups cooked rice
  • 2 slices stale bread, crumbled
  • ¼ large bell pepper, chopped fine

Instructions

  1. In a large skillet, melt the fat over medium heat.
  2. Add giblets and cook until browned.
  3. Stir in onion, celery, bell pepper, garlic, parsley, and green onion.
  4. Season with salt, pepper, and poultry seasoning.
  5. Pour in chicken broth and simmer 10–15 minutes.
  6. Add cooked rice and crumbled stale bread.
  7. Mix well and cook until heated through and flavors blend.
  8. Taste and adjust seasoning.
  9. Serve warm.
