Dirty Rice (Homestyle Southern Recipe)

Ingredients
- Giblets of 3 chickens, chopped
- 1 medium onion, diced
- 2 tbsp parsley
- 3 tbsp fat (butter or drippings)
- 1 clove garlic, minced (optional)
- 3 tbsp green onion, chopped
- Salt, pepper, poultry seasoning to taste
- 1 cup chicken broth
- 2 stalks celery, chopped fine (include leaves)
- 1 ½ cups cooked rice
- 2 slices stale bread, crumbled
- ¼ large bell pepper, chopped fine
Instructions
- In a large skillet, melt the fat over medium heat.
- Add giblets and cook until browned.
- Stir in onion, celery, bell pepper, garlic, parsley, and green onion.
- Season with salt, pepper, and poultry seasoning.
- Pour in chicken broth and simmer 10–15 minutes.
- Add cooked rice and crumbled stale bread.
- Mix well and cook until heated through and flavors blend.
- Taste and adjust seasoning.
- Serve warm.
